Summer Sea Salad

Sea salad is excellent for summer.

Ingredients for 5 people:

  • 800 g. of octopus
  • 400 g. of peppers
  • 1 kg of mussels
  • 1 kg of clams
  • 300 g. shrimp
  • 200 g of surimi
  • 200 ml of extra virgin olive oil
  • 1 lemon
  • Parsley
  • salt
  • sparkling white wine

Preparation:

The first thing to do is to clean the octopus under running water normally in the sea salad you only use the tentacles then you cut and go to cook in boiling water and salt.
About 40 minutes.
Then you go to the clams and mussels that are treated differently, the clams are soaked with salt for an hour while the mussels should be cleaned from the beard.
Then, in two different pots with lid, cook both clams and mussels, add a drizzle of extra virgin olive oil, a pinch of salt and half a glass of sparkling white wine for both preparations.
About 5 minutes.
In a bowl sauté some parsley and add extra virgin olive oil.
At this point the shrimps, the surimi and lastly the peppers remain if you want to add them.
Take the shrimps and remove the protective shell, if they are large also remove the black thread that you see in the tail making a small incision above.
Prawns and surimi can be cooked together for 4 or 5 minutes in a pot with boiling water.
Finally, the peppers should be sautéed in a pan with extra virgin olive oil and salted.
It combines everything and is added if the extra virgin olive oil is missing, add a pinch of salt and mix.
The dish is ready.
