Pumpkin and Porcini Rice


An easy rice with an intense taste.

Ingredients for 4 people:

  • 200 g of rice
  • 300 g of pumpkin
  • 100 g of porcini mushrooms

Preparation:

As always, one of the first things to do for rice is to prepare the broth that is used in cooking rice then take a pot and pour the water with the vegetable powder, medium / low heat.
You take the pumpkin takes off the peel and I semi and cut it into cubes.
At this point, take another pot and pour in it a glass of hot broth and the diced pumpkin. The fire must be low and must be mixed often to prevent it from sticking to the bottom of the pot.
After a couple of minutes the pumpkin should be cream and a point is added to the porcini mushrooms.
Before starting with rice, a passage of time so that the mushrooms and the pumpkin come together well.
At this point add the rice and mix with the addition of the broth in small doses and salted.
When the rice is ready add the pumpkin bread and mushrooms is ready to be served on the table.

Tips:

It is not necessary to finish the stock but it is essential not to finish it before the rice is ready.
